It’s been kind of a quite month. Kyllan and I have been getting ready for Christmas. It’s difficult buying gifts for Kyllan because she always finds them and/or shakes the boxes under the tree. I’ve been trying to do a little cooking.

  1. Try this simple receipt for lemon cheesecake
    Crust = 2 cups of graham cracker crumbs, 1 stick of butter and 1/4 cup of sugar. Melt butter in large measuring cup, add sugar, stir well, add bread crumbs and stir. Press into 9 by 13 baking dish, refrigerate.
    Filling = four packages (8 ozs.) cream cheese, 1 & 1/4 cup of sugar, 1 package of lemon gelatin, 1 teaspoon of lemon extract, 5 eggs slightly beaten.
    Mix cream cheese and sugar till creamy about four minutes, add lemon gelatin and lemon extract beat another three minutes. Add eggs, beat on low speed just until combined. Pour in crust. Bake at 325 for 40 minutes. Color will be dull and soft. Cool on wire rack for one hour and reftigerate overnight. Enjoy!
